Combined Powers: Blockchain and AI in Transforming the Food Supply Chain (TRUST-FOOD)

The "Combined Powers: Blockchain and AI in Transforming the Food Supply Chain" is an exploration in 2 technologies with a high potential to lead on the digital revolution: blockchain and Artificial Intelligence (AI), zooming in on the food supply chain sector in particular. The TRUST-FOOD project - the creator of the course, aims to up- and re-skill SME employees through short-term training courses and upskilling programs.
Why this course?
This course introduces learners to the concepts of Artificial Intelligence and Blockchain Technology, bringing together a variety of use cases of innovative technologies and real-world examples. It aims to approach the topic of AI by categorising it against the benchmark of human intelligence and constructs a solid introduction to blockchain technology and smart contracts. The course also introduces the concept of the Food Supply Chain, with its processes broken down into 5 stages: 1) production, 2) processing, 3) distribution, 4) retailing, and 5) consumption. Each stage of this chain is explained, together with all the challenges that come along throughout the entire journey of product ("from farm to fork") and thoroughly analysed.
Background and context
As blockchain and AI technologies continue to evolve, we can expect to see increased adoption of their applications across the food industry, leading to a more sustainable, resilient, and trustworthy food system. The potential of these two technologies’ evolution is presented through various applications in different fields, such as tokenization, decentralized marketplaces, sustainability tracking or food safety compliance. Finally, the course investigates the results of integrating artificial intelligence technologies with smart contracts and how AI-driven smart contracts can enhance traceability and efficiency in the food supply chain. The course also dives into the limits of blockchain and AI solutions and focuses on exploring the synergies between the two technologies.
Learning outcomes
By the end of this course, learners will:
- Be able to discuss the beneficial impact of blockchain applications in the context of the food supply chain sector and break down complex blockchain terminology so it is understood by all.
- Gain an improved understanding of the potential of blockchain and AI to transform parts of the food supply chain sector and present the benefits of real-time decision-making using AI and blockchain.
- Understand the benefits and challenges of existing blockchain applications in the context of the Food Supply Chain Sector
